Recipes for Your Kentucky Derby Party–benedictine, Kentucky Derby Pie and Limoncello Mint Lemonade

Kentucky horse racing can be traced back to 1783 when races were being held in the middle of Kentucky streets and on a number of private tracks located on farms throughout the area.

Several concerned citizens complained about safety issues, and eventually the first race track was built in Lexington in 1789.

Almost one hundred years later in 1872, a young entrepreneur named Col. M. Lewis Clark traveled in England and France visiting a number of prominent racing leaders. Upon his return, he devised a plan to create a Louisville Jockey Club to showcase the Kentucky breeding industry.

The track formally opened May 17, 1875 when over 10,000 excited fans witnessed four spectacular races. The winner of the first race was Bonaventure, however the winner of the day’s featured race, the Kentucky Derby, was a three-year-old chestnut colt named Aristides.

Eventually the track became known as “Churchill Downs-Home of the Kentucky Derby” because Clark leased the land from his uncles, John and Henry Churchill.

Over the years, several improvements have been made to the property, including the addition of the now famous spires on the top of the main building, making Churchill Downs the most well known horse racing venue in the United States.

This year, the 134th running of the Kentucky Derby will take place on May 3, 2008 at 11:00 a.m. Take this opportunity to officially welcome Spring and plan a Kentucky Derby party. I’ve given you a few of my favorite recipes to help get you started.

Appetizer–Warm Vidalia Onion Dip

Made with the sweetest onions and served warm with your favorite crackers, get ready to hand out this recipe. Our Aunt Diane first made this dip and since then it has become a family favorite.

1 cup mayonnaise

1 cup sweet onion, finely chopped

1 tablespoon grated Parmesan cheese

1/4 teaspoon garlic salt

1 cup shredded Swiss cheese

Assorted crackers

Preheat oven to 325 degrees.

In a bowl, combine the first four ingredients. Stir in cheese and spoon mixture into shallow baking dish.

Bake for 40 minutes or until dip is bubbly. Serve warm with crackers.

Main Course–Benedictine (Cucumber Sandwiches)

Served regularly at the Kentucky Derby, Benedictine is made with cucumber and cream cheese and is named after the restaurant that first created it. The most common way to eat it is to make finger sandwiches by spreading the mixture on cocktail bread. You can also thin it out with sour cream to make a dip for vegetables.

1 large cucumber

Grated 8 ounces cream cheese, softened

2 tablespoons onion

1/4 tsp salt

1 tablespoon mayonnaise

Dash green food coloring (optional)

Cocktail bread (pumpernickel is good) or vegetables

To make it, start by paring, grating and draining the cucumber. Combine with remaining ingredients in food processor and pulse until well combined.

Dessert–Kentucky Derby Pie

There are a million recipes for Kentucky Derby Pie but I like this one because it’s made with chocolate and walnuts. It’s rich and gooey.

1/2 cup butter, melted

3/4 cup sugar

1/2 cup flour

2 eggs

1 tablespoon bourbon

3/4 cup semisweet chocolate chips

1 cup chopped walnuts

1 prepared 8 inch pie crust

Preheat oven to 350 degrees.

Spread chocolate chips and nuts in bottom of prepared pie shell.

In a mixing bowl, cream butter and sugar together. Mix in flour. Beat the eggs slightly, and stir into the creamed mixture. Add bourbon.

Pour filling into pie shell (over chips and nuts) and bake at 350 degrees for 30 to 40 minutes.

Cocktail–Limoncello Mint Lemonade

Limoncello Mint Lemonade is a new wave cocktail made with fresh mint leaves.

1/2 cup lemonade concentrate

1/4 cup fresh mint leaves

1 tbsp. fresh lemon juice

Ice cubes

1/4 cup Limoncello (lemon liqueur)

1/2 cup club soda

In a small pitcher, “muddle” mint leaves together with lemonade concentrate and lemon juice. Muddle means to bruise the leaves so they release their flavor. I use the end of a wooden spoon.

Stir in ice cubes, Limoncello and club soda and pour into 4 glasses. Top them off with a lemon slice and a sprig of fresh mint.

Makes 4-10 oz. drinks.

Invite some friends over, make some great food and watch the Kentucky Derby together. Hopefully I’ve given you some recipes to start with.

The holidays are upon us. Thanksgiving and Christmas are the two major holidays each year and there is so much food consumed during these two days. People travel long distances to be with their families during the holidays. A big part of the holidays revolves around food. Many people look forward to the food as much as they look forward to spending time with family. Thanksgiving means turkey, stuffing, potatoes and many other side dishes along with a host of desserts. Unfortunately holiday food also means holiday calories and pounds. People gain more weight during the holidays than any other time of year. One way to get a handle on all the food that is being passed around during this time of year is to modify some of your favorite recipes. By simply finding a good diet recipe that is your staple at office and church potlucks during the holidays, you can help your calorie count out tremendously. Using a diet recipe doesn’t mean you have to sacrifice all the flavor and pizzazz you’re used to. With all the different functions you likely attend during the holidays, why not integrate your calorie watching into that? There are a lot of diet recipes out there that you would never know are good for you. Many of the holiday classics can be modified to be what’s considered a diet recipe. Just think of that secret carrot cake recipe you’re famous for, grandma’s world famous mac ‘n cheese recipe or even your favorite cookies. There are tons of alternative ingredients you can use to lower the fat and calorie content of all those dishes. And the best part is, often times when you switch out the ingredients, the flavor doesn’t have to be sacrificed. Using diet recipes isn’t the only way to cut back during the holidays.

You can simply watch your portion sizes as well. Indulging isn’t completely wrong all the time. But remember to not overeat. You can simply have a little of everything. Follow the cues your body gives you and don’t eat until you make yourself sick. If you’re the one doing the hosting and cooking at your house, try a few diet recipes. You can easily incorporate these into the traditional Thanksgiving and Christmas dinners and your guests will be none the wiser. Of course they’ll be thankful that you saved them some calories. And you might find that your guests are anxious to get the diet recipes from you. Just because it’s the holidays doesn’t mean that all is lost where calories and fat are concerned. You can take charge of your holiday eating by using Diet recipes along with some of your other favorite dishes.

The flavors of Jamaica are the product of the island’s history combined with a verdant, lush climate. The Spanish, British, African and East Indian have all had an influence over what is today a unique island cuisine made colorful by the many tropical fruits that thrive here.

The waters off Jamaica have always teemed with fish and seafood is the primary protein source for islanders. Snapper, grouper, sea bass and other reef a deep sea fish are caught daily by the many fishermen whose boats line the beaches. Spiny lobster, shrimp and freshwater crustaceans are readily available and cooked usually in a thick sauce. Chicken and goats are well suited to the small mountainous island and are kept by many families but cattle are rare and beef is not the predominant meat.

Many of Jamaica’s fruits, including pineapple, mango, banana and avocado were brought to the region by slave traders and plantation owners experimenting with crops. What were once sugar cane fields are now being used to grow fruits and ackee for export and domestic use.

Few other cuisines mix such a range of spices and tastes - sweet, hot and savory - as Jamaican cooking. Jamaican food wouldn’t be the same without the spices, seasonings and colors from: Allspice, the pimento berry.

Among many of the spices grown in Jamaica are nutmeg, ginger, thyme, scotch bonnet peppers, which are integral distinct flavors of Jamaican cooking. The pungent thyme grows rampantly on the island and is found in the majority of Jamaican foods.

Favourite Jamaican foods are those for coconut cake, rum punch & beef jerky recipies.

Real Jamaican food, when cooked with feeling, is a soul-satisfying experience.

Experimenting With Barbecue Sauce Recipes

In general, I am not a chef. In my house, I do very little of the cooking, although I do enjoy it when I get the chance. The one thing that I have always loves to cook, and insist on cooking every time, is barbecued meat. I love barbecuing, grilling, roasting, smoking anything that involves placing a good cut of meat over high heat and open flames.

I have to confess that one of the things I like about this form of cooking is that it is so easy to get good results. As long as you have the rights barbeque sauce, you can not go wrong. Until recently, I never had to try a barbecue sauce recipe, because there was a locally made barbecue sauce called Memphis Minnie’s that was just simply spectacular. Unfortunately, it recently went under.

I tried cooking with other locally available barbecue sauce recipes, but it was just not the same. People who had praised my cooking in the past were much less lavish with their praise. I just could not get the same results. I looked everywhere for a barbecue sauce recipe that would duplicate the flavor of Memphis Minnie’s, but it was all in vain.

Finally, I figured out that I would have to invent my own barbecue sauce recipe. I had no idea how to go about doing this, and had to learn all kinds of new things. Preparing a barbecue sauce recipe is not as easy as you might think. You have to strike a delicate balance between preserving the flavor, and creating something that is delicious immediately after it is cooked. Almost any good barbecue sauce recipe, it turns out, has to be used within a week of being prepared. Otherwise, it will become stale.

The fact that I lost my favorite recipe for barbecue sauce turned out to be a blessing in disguise. You see, once I started experimenting with barbecue sauce recipes, I found out quickly that you can make something that is much more delicious than anything you can buy in the store. As long as you are able to use it up within the next couple days, you can make something that is spectacularly flavorful and much more healthy than any commercially available barbecue sauce recipe. Knowing this, I have decided to never buy barbecue sauce again. Why would I, when I can make something that tastes much better? I never got so many compliments before…

Organize Your Recipe Collection For Free

Collecting recipes from all over the world wide web can be fun and very rewarding in terms of the food you eat. It can also be a nightmare to organize. It doesn’t have to be. A little work early on will pay rich rewards as your recipe collection grows.

There’s no need to buy expensive software, everything you need is on your computer right now. There’s no need to print anything out, either, even though most good cooking websites provide you with that facility. You just need to follow the easy, step by step, instructions below.

I’m going to assume that you are a Windows user and that you have Internet Explorer as your web browser (the software that lets you access the internet). If you have a different system don’t worry, the only real difference is likely to be that your ‘Favorites’ file is called ‘bookmarks’. I’m also going to assume that you know next to nothing about using that file. You may find it easier to print these instructions out.

Here’s what you need to do:

1.Open your browser by double clicking on the ‘e’ shaped icon on your desktop (the area of screen you see when nothing else is happening).

2.In the top gray bar you will see the following: File Edit View Favorites Tools Help. Click on Favorites.

3.In the menu that appears click on Organize Favorites and in the little box that pops up you will see four buttons on the left. Click on Create Folder.

4.In the little window on the right you will see a new folder appear with the words ‘New Folder’ highlighted in blue. Without doing anything else, type the word Recipes and hit the ‘enter’ key. That’s step one completed.

5.Now click on Create Folder again and name this folder Chicken. You now have two new folders, one below the other, but we want the Chicken folder inside the Recipes folder and that’s easy to do.

6.Highlight the Chicken folder by clicking on it once. Click on the button marked Move to Folder.

7.In the window that appears scroll down to the Recipes folder, click on it once and then click ‘OK’. As you return to the original window you will see that the Chicken folder has disappeared.

8.Click on the Recipes folder and you will see it reappear, but this time it’s inside the Recipes folder.

9.Adding more sub-folders is a snap. All you have to do is highlight the Chicken folder by clicking on it once and then click Create Folder. You will see your new folder appear under the Chicken folder and inside the Recipes folder. Call this one Lamb or Salmon or anything else you like. You can go on adding folders like this until you have all you need. You can also add more at a later date just by following the same process.

Before we finish, let’s just check that you have everything working as it should. Go to this page http://www.all-about-cooking.com/chicken (if a box drops down with my picture on it click the little ‘x’ in the top right corner to get rid of it) and click on Favorites followed by Add to Favorites.

Scroll down in the window that appears and click on the little [+] next to Recipes, then Chicken and finally the OK button in the top right corner. That’s it, you’re done. You now have a complete chicken recipe collection neatly stored in your favorites file that you can access any time you like. And of course you can add as many different web pages or individual recipes as you wish by following the same simple procedure. Just get into the habit of clicking the Favorites button whenever you find a recipe you like and you need never be surrounded by bits of paper again.
